Heat oven to 425 degrees. Place vegetables on pita bread. Cover with a large spoonful of tomatoes. Toss a handful of cheese over the tomatoes. Place on cookie sheet and heat in oven for no more than 5 minutes. Remove from oven. If desired, cut into 4 wedges before eating.
