Ribera del Duero Type of wine: Red Gran Reserva Grape variety: 100% Tinta del País (Tempranillo) Vintage: 2008 – Very good Production process: Selected grapes from low-yielding, old bush vines, which give very concentrated fruit. Hand harvesting and double selection table on arrival at the winery. Crushing with destalking. Temperature controlled fermentation. Malolactic fermentation, part in stainless steel and part in French oak barrels. Fining and racking. Ageing: 24 months in high quality French oak Bordeaux barrels (225 litre capacity) and a minimum of 36 months ageing in bottle before release. Tasting notes Colour: Intense garnet colour, with a more tawny-coloured rim due to the long ageing in barrel and bottle undergone by these great wines. Aroma: The nose is intense and complex, with very ripe fruit mixed with notes of spices such as aromatic cloves. Upon aeration, it unveils aromas of caramel, vanilla and patisserie. Palate: An ample, round and velvety wine. It is full-bodied and persistent on the palate, very polished, with well-integrated oak, making it a very elegant wine. Serving suggestions Serving temperature. 16º - 18ºC approx. Food pairings: It goes well with large and small game dishes, wild boar, venison, roebuck. Roast red meats or stews beef, suckling pig or lamb. Rich sauces or dressings of aromatic herbs. Mature cheeses and high quality, dark chocolate with around 70% cocoa solids.
